Going with it and Chicken Bacon BBQ Pizza

Some days just work out a little differently than you plan but that’s ok because that is the way it was suppose to be. Plans change, dinner doesn’t work out quite the way you planned, the laundry that you were going to do it still piled up beside the washer. I had grand plans of cleaning up the house while Peanut and Pumpkin were at school.

Today, it just didn’t happen. The laundry is still going to have to be done tonight but I am not going to have to worry about the school shirts that are still in the laundry for their Friday celebration because they are participating in Wear you College Colors Day. Score! I only have to stay up to make sure the jeans are clean! See that’s a case of it just works out the way it was suppose to be.

As far as cleaning up the house, most of the mess was the kidlets’ mess so when they wanted some Wii time they earned it by picking up the mess that I intended to clean up. My clean up time turned into some time with a friend trying to fix her hair for her to go out tonight. It worked out that I was able to help her and the kids cleaned up the mess they made.

Our plans for the night fell through so we are having a much needed night off and just a little bit of down time 
before the busy Labor Day weekend. With our plans falling through it made it a little hectic to get dinner done. I originally was going to make chicken alfredo since I had frozen chicken and that is a quick meal; but I quickly realized that we were out of alfredo sauce.

Ok so now what?  Pizza, I can make pizza so Chicken Bacon BBQ Pizza it was and it turned out fantastic! The kids are in bed and we are relaxing flipping between baseball and football and enjoying the night. So plans change and that’s ok because that’s just the way it was meant to be. Just roll with the changes and enjoy the ride that life gives you.

Before I forget here is the recipe.

Chicken Bacon BBQ Pizza
1 pack of yeast
1 cup of warm water
1 teaspoon oil (I like olive oil for pizza dough)
2 ½ cups of flour
1 or 2 chicken breast
½ cup of BBQ Sauce
¼ cup of Real Bacon Pieces
2 cups cheddar cheese
  1. Boil chicken until it is cooked through. Dice chicken and set to the side.
  2. Preheat Oven to 400 degrees.
  3. Make pizza crust. Combine Water and Yeast. Then stir to dissolve. Add oil and flour and mix well. Cover with a towel or plastic wrap and sit on stove for 15 minutes while oven is heating up.
  4. Place a small amount of flour or cornmeal on your pan and spread the pizza dough out on the pan.
  5. Spread BBQ Sauce on the dough in a circular motion and add the remaining toppings and chicken.
  6. Bake in the oven for 15-20 minutes.
  7. Enjoy!

Raising Mini Me

There are some days when I look at my children and think there is no way that you could be any more like me. Our children take the best of us and the worst of us. It is amazing to me how much they are like us and how much of our other half we see in our little minis.

Let me tell you, Peanut is JUST LIKE ME! I am raising myself. My dad always finds a way to point it out to me when we get to see him and my grandmother is quick to point it out as well. She is a bubbly, jumpy, spastic, talkative, lovable, energetic little girl.

Now Pumpkin on the other hand is just like Big Daddy. He is such an intelligent little guy. He is his daddy made over. He wears his heart on his sleeve, he is kind and compassionate, smarter than I could ever think about, a little bookworm of sorts, a good friend to others and willing to jump in and help anyone at anytime. It amazes me how much alike they are.

Now there are parts of me in both of them, for instance we are the most accident prone family you will ever meet. I know they get that from my family, even though Big Daddy was known to walk into walls when he was little. There is always a random bruise on my body that I am wondering where I got it from. Their willingness to serve and help others came from me as well. I am glad that there are both good traits and bad that we have passed down to them.

It has already been a week for us and it is just Wednesday. Peanut has gotten into some trouble the last few days at school. Her teachers even started a count. Yesterday she got out of her seat 15 times and used the teachers crate seats as a balance beam. She also never stops talking. I was known as Babbles as a little girl. Sigh.

I know it will get better and she will settle as she settles into kindergarten but sometimes I wish she would hurry up a little. Well, no I don’t actually wish that either. They grow up so fast. I can’t believe how fast they grow up it seems like just yesterday they were babies.

Gardening

We had our first big garden this year. We planted tomatoes, cucumbers, pumpkins, cantaloupe, corn, green beans, waxed beans, zucchini, and squash. Our zucchini and cucumbers went crazy and produced so much stuff but everything else just didn’t do too well. Now the season is turning and we have a few tomatoes left but everything else is gone.

It is funny that life is like that too. Some days are better than others. It doesn’t mean that it is wrong it just means that it is different. The last few weeks have been rough for me personally. I have had personal struggles and problems with friends. I have tired really hard to pray myself through it but do you know how hard it is to pray for someone that has hurt you and even angered you?

The same week that I felt like I was done wrong by a friend I received some unexpected papers in the mail that complicated the plans we were making. I just felt like the hits kept coming. I really felt a little like Job. Funny thing happened at the church we were visiting on that Sunday. The preacher spoke on Job.

I swallowed my pride and said ok God, I gotcha. Bad things happen to good people just like Job. We worked through most of the issues but the one thing that has been on my mind still was the good friend that was lost. It hurts that I don’t know what happened and probably will never know. But I trust in these words,  “There is a time for everything, and a season for every activity under the heavens: a time to be born and a time to die, a time to plant and a time to uproot, a time to kill and a time to heal, a time to tear down and a time to build, a time to weep and a time to laugh, a time to mourn and a time to dance, a time to scatter stones and a time to gather them, a time to embrace and a time to refrain from embracing, a time to search and a time to give up, a time to keep and a time to throw away, a time to tear and a time to mend, a time to be silent and a time to speak, a time to love and a time to hate, a time for war and a time for peace.”

Just like my garden is changing so am I and sometimes things don’t fit in just the way they use to. There is a season for everything and I am moving forward and can’t wait to see what is ahead.

A New Start


Hi and welcome to my new blog. I am starting all over. A new fresh start. I can't promise a post every day but I can once a week. ;) I am a stay at home mom to two beautiful children, Pumpkin is an 8 year old little boy and Peanut is a 5 year old little girl. No that is not their real names. ;) Trying to protect them. I am very lucky to have been blessed with them after struggling with PCOS. I am also very blessed to be married to my high school sweetheart. Big Daddy and I have been together since our Sophomore year of High School and have been married almost 11 wonderful years. 

As I said I am a stay at home mom and I dabble in this and that. I love to cook! I love to bake more specifically. Cupcakes are my "thing". I love to make Pink Lemonade Cupcakes and Chocolate Peanut Butter Cupcakes. I have recently started to learn how to can things and made some yummy jellies, canned peaches, salsa, and spaghetti sauce. I cook up a storm and make big messes in the kitchen. I am also a crafter. I love to make bows and sew and can usually figure it out without a pattern. I love the challenge of figuring something out. I can't wait to teach all of you some of the fun things I do. 

I love to help people so there will definitely be some of those stories here for you.  I volunteer at Peanut and Pumpkin's school and was very active at our previous church. We are currently looking for a new church home and a way to give to others. There are so many people in this world that are in need of a little helping hand, a smile, a hug, or just some compassion shown to them. I have had a lot of struggles lately with who I am and what is my purpose so this is a journey to try to figure those things out. I look forward to getting to know you all more as well as getting to know myself.
