Some days just work out a little differently than you plan
but that’s ok because that is the way it was suppose to be. Plans change,
dinner doesn’t work out quite the way you planned, the laundry that you were
going to do it still piled up beside the washer. I had grand plans of cleaning
up the house while Peanut and Pumpkin were at school.
Today, it just didn’t happen. The laundry is still going to
have to be done tonight but I am not going to have to worry about the school shirts
that are still in the laundry for their Friday celebration because they are
participating in Wear you College Colors Day. Score! I only have to stay up to
make sure the jeans are clean! See that’s a case of it just works out the way
it was suppose to be.
As far as cleaning up the house, most of the mess was the
kidlets’ mess so when they wanted some Wii time they earned it by picking up
the mess that I intended to clean up. My clean up time turned into some time
with a friend trying to fix her hair for her to go out tonight. It worked out
that I was able to help her and the kids cleaned up the mess they made.
Our plans for the night fell through so we are having a much
needed night off and just a little bit of down time
before the busy Labor Day
weekend. With our plans falling through it made it a little hectic to get
dinner done. I originally was going to make chicken alfredo since I had frozen
chicken and that is a quick meal; but I quickly realized that we were out of
alfredo sauce.
Ok so now what? Pizza, I can make pizza so Chicken Bacon BBQ
Pizza it was and it turned out fantastic! The kids are in bed and we are
relaxing flipping between baseball and football and enjoying the night. So
plans change and that’s ok because that’s just the way it was meant to be. Just
roll with the changes and enjoy the ride that life gives you.
Before I forget here is the recipe.
Chicken Bacon BBQ Pizza
1 pack of yeast
1 cup of warm water
1 teaspoon oil (I like olive oil for pizza dough)
2 ½ cups of flour
1 or 2 chicken breast
½ cup of BBQ Sauce
¼ cup of Real Bacon Pieces
2 cups cheddar cheese
- Boil chicken until it is cooked through. Dice chicken and set to the side.
- Preheat Oven to 400 degrees.
- Make pizza crust. Combine Water and Yeast. Then stir to dissolve. Add oil and flour and mix well. Cover with a towel or plastic wrap and sit on stove for 15 minutes while oven is heating up.
- Place a small amount of flour or cornmeal on your pan and spread the pizza dough out on the pan.
- Spread BBQ Sauce on the dough in a circular motion and add the remaining toppings and chicken.
- Bake in the oven for 15-20 minutes.
- Enjoy!
